VALMAR CATALOGUES
COMBISYSTEM is the manufacturer's freezing system for the TTi series. It combines control, cylinder, drive, agitator and scrapers. Its importance lies in coordinating these assemblies according to quantity and recipe.
HEAT EXCHANGE
Direct refrigerant evaporation removes heat from the cylinder. The scrapers remove the frozen layer from the wall, and the agitator returns it into the whole mass. The condition of the scrapers is therefore important for a repeatable process.
DRIVE
The mixing speed is adjusted to the phase and the product. During discharge, a controlled speed profile can help with loading into the tub and adding toppings.
CONSISTENCY
SNOWY TTi monitors the agitator torque and temperatures. Consistency is therefore not determined only by a pre-set time. The result is still checked against the actual recipe.

The TTi designation alone does not tell us whether the machine cooks, pasteurises or only freezes. That is determined by the family: SNOWY, SWEETY, SMARTY, MULTY or EASY.
The indirect bain-marie system helps process the mix evenly throughout the vessel. When selecting, check the minimum permitted quantity so that smaller batches remain within the working range. The standard SWEETY TTi and JetMix have different connected load data.
Heaters and product transfer are separated from the cold unit. MULTY P has two independent drive controls and the stated cooking up to 125 °C. For SMARTY, the model source states cooking up to 98 °C. We do not generalise these limits to the whole range.
Heating with hot gas reverses the role of the cooling process. Sequential heating, cooling and freezing take place in the same chamber. When planning, take into account the time of the full cycle, not only the freezing time.
JetMix uses a multifunctional agitator: first gentle combining of ingredients, then more intensive processing at the appropriate temperature, and during ageing a gentler mixing again. The aim is to control the dispersion of ingredients and the structure of the mix through different phases.
HyperBlend is a separate option for SWEETY or SWEETY JetMix. It is intended for processing fresh or frozen fruit directly in the vessel. Speed, torque and processing time are matched to the product. The manufacturer expressly states that HyperBlend is not included in the basic machine purchase.
Different attachments perform different tasks: dispersing pastes, processing fruit or cutting larger pieces. Adjustable speed and a movable drive make it possible to adapt to the bowl and the recipe. It is not to be confused with a pasteuriser or a high-pressure industrial homogeniser.
A flexible rotor, flow measurement and programmed dosing help fill the batch freezer. Models 70 and 200 have different flow ranges; the choice also depends on hoses, transfer route, viscosity and cleaning regime.
It doses ready-made gelato into tubs, adjusts filling speed and counts doses. The catalogue lists a 15,5 l cylinder and an adjustable dose of 20–2.200 ml. The doser capacity must be matched to ice cream supply and the subsequent closing and hardening stage.
Separately preparing a larger quantity of base, ageing it and then making the individual flavours can relieve the main freezer. For a smaller number of recipes or a different setup, a combined machine may be suitable. The choice is based on the full daily schedule.
BIG SIZE denotes larger models for batch processing. For example, according to the catalogue, the SNOWY 27 TTi takes 4–27 kg of mix per batch. This is a different production method from an industrial continuous freezer with constant infeed and outfeed.
After each product, we plan proper cleaning, recipe separation and allergen handling. The wash programme, hand shower, wash-out tap and dismantling of parts are different functions. On the SWEETY TTi, the automatic system is listed in the technical overview as an option, so we check whether it is included in the quotation.
When measuring consumption, we compare the same quantity and initial temperature of the mix, the same final consistency and the same cooling method. Connected power in kW is not consumption in kWh per batch.
